Quick answer: The most authentic local restaurants in Cairo, the places to eat like a local, are Koshary Abou Tarek downtown for koshary, Abou Haidar in Heliopolis for Egyptian shawarma, Kebdet El Prince (El Brens) in Sheikh Zayed for liver and molokhia, Hagogah near the airport for home-style rural cooking, Bahary in New Cairo for seafood, and Al Khan by Granita in Al-Azhar Park for a meal facing the Citadel. Koshary Abou Tarek: Downtown's koshary house

Koshary, added to UNESCO's intangible cultural heritage list in December 2025, is rice, pasta, black lentils and chickpeas under spiced tomato sauce and fried onions, finished with daqqa (garlic with vinegar or lemon) and chilli. Koshary Abou Tarek (كشري أبو طارق) serves it from a four-storey building on the corner of Maarouf and Champollion streets (Egyptian Streets, 2022).

Founder Hajj Youssef Zaki, known as Abou Tarek, told Bidoun in 2010 that he sold from a cart on this same corner and took over a small coffee shop there around 1989. The brand's own history says the cart first belonged to his father. The cart still stood outside in 2022.

  • Where: 16 Maarouf Street. Nearest metro: Gamal Abdel Nasser, per the brand.
  • How to order: pick a box size, add tomato sauce, chilli and daqqa, and take toasted bread pieces (aish mohammas) on the side.
  • Price, checked October 2026: menu listings updated in September 2026, not confirmed by the brand and possibly for another branch, showed boxes at EGP 45 to 110 (~$0.90 to $2.10) and om ali at EGP 60 ($1.15).
  • Hours and booking: we found no published hours and no booking system, so treat it as walk-in. The brand says Fridays bring music.
  • Branches: City Stars in Nasr City, Hyper One in Badr, a Sheikh Zayed takeaway outlet, and branches in Jeddah and Makkah. This guide covers the Downtown original.

How it differs from Koshary El Tahrir: Abou Tarek's original is one four-storey Downtown house; El Tahrir is an inexpensive chain with branches in Cairo, Alexandria and the North Coast (Egyptian Streets, 2021). More options: koshary houses and cheap eats.

Abou Haidar: Egyptian shawarma in Heliopolis

Abou Haidar (أبو حيدر) has sold shawarma in Roxy, Heliopolis, since 1968, according to the Egyptian food site Food Today, which in 2023 called it the most famous shawarma shop in Heliopolis. Egyptian shawarma is tangier than the Levantine kind (Egyptian Streets, 2020). Here it comes in a small kaiser-style bun with tahini and a house sauce.

We found no official page. Menu sites listed it in 2026, but the newest press we read is from 2023, so check it is open before you cross town.

  • Where: on or just off Ibrahim El Laqqani Street in Roxy. Listings disagree on the exact address, so look for the queue.
  • What to order: beef shawarma buns, homemade chips and a cold mango juice (Egyptian Streets, 2021).
  • Price: we found no 2026 price. The last press report on its prices dates from January 2023, so ask when you order.
  • Hours: not published, and listings disagree, so check on the day.

Kebdet El Prince (El Brens): liver and molokhia in Sheikh Zayed

"El Brens" is how Cairenes say El Prince: Kebdet El Prince (كبدة البرنس). It opened in 1980, per Egyptian Streets, as a no-frills, street-side spot on Talaat Harb Street in Imbaba. The Imbaba shop closed in September 2022, and it reopened on 15 December 2025 in Sheikh Zayed, west of Cairo.

  • Where: First District, next to the White Mosque, opposite the Faculty of Engineering. Some delivery apps label the area 6th of October.
  • What to order: mixed liver in sauce (kandoz), grilled camel liver, molokhia, war'it lahma (beef parcel), akkawi (oxtail) tagine, hawawshi.
  • Price (December 2025 menu, the latest we found, checked October 2026): meat and liver are sold by weight. Mixed liver is EGP 275 a quarter kilo ($5.30), fried beef (lahma mohamara) EGP 650 a half kilo ($12.50) and takeaway hawawshi EGP 125 (~$2.40).
  • Setting and booking: indoors, larger and more modern than Imbaba. Hours and booking are not published.

Hagogah: home-style and rural cooking near the airport

Hagogah (حجوجة, also written 7agogah) calls its food home-style and rural (falahi). Per CairoScene, the name is a persona for the Egyptian teita, or grandmother. Owner Islam Salama reopened it in the Sheraton area in January 2022, after a North Coast summer. Its social media was active daily in October 2026.

  • Where: El Sa'qa Street by the Artillery Garden, at the turn into Masaken Sheraton from the Suez Road, near Cairo airport.
  • What to order: moamar rice (baked and creamy) and stuffed pigeon (hamam mahshi), Scoop Empire's picks in June 2025. The 2022 menu also listed mahshi, mombar, fatta, liver and offal such as brains and trotters.
  • Price, hours and booking: we found no price, so ask when you order. Hours were 2pm to midnight in January 2022 and may have changed.

Bahary: seafood in New Cairo

Bahary (مطعم بحرى) has served Egyptian seafood since 1995, the restaurant says. Its New Cairo branch fills a glass-fronted, three-floor building (Scoop Empire, January 2024). EnterpriseAM called the Nasr City branch on Makram Ebeid Street humble and cosy in 2024.

  • Where: Fifth Settlement, Third District, off North 90 Street behind the Human Rights Building, noon to 1am. The Nasr City branch runs to 3am.
  • How it works: there is a traditional ice display, plus a pasta station that cooks your chosen seafood to order. One fish dish fed three to four people (EnterpriseAM, 2024).
  • What to order, at the restaurant's own prices on 11 October 2026: chef's signature seafood soup (roe and shrimp in broth) EGP 495 ($9.50), shrimp dynamite EGP 335 ($6.45), sayadia rice with shrimp EGP 205 ($3.95), fried calamari EGP 930 ($17.90) and grilled sole EGP 1,780 (~$34.25). Portion sizes, tax and service are not stated. EnterpriseAM liked a shrimp bisque made with tomato instead of cream in 2024.
  • Booking: in 2024 there were no reservations, only a waiting list. Bahary now also takes table requests.

Al Khan by Granita: a meal facing the Citadel

The "Granita" with a Citadel view is Al Khan by Granita (مطعم الخان), an Arabesque-style offshoot of Zamalek's Granita on the lake inside Al-Azhar Park. EnterpriseAM described a front-and-centre view of the Citadel in April 2026.

  • Entry: you pay Al-Azhar Park entry at the gate first. We could not confirm a current official ticket price in October 2026.
  • Menu and price: the only menu we could read is the Ramadan 2026 suhoor set: ful, falafel, bessara, fattoush, eggs and feteer meshaltet. EnterpriseAM put its March 2026 visit at about EGP 1,000 per person (~$19), the latest price we found (checked October 2026).
  • Seating: outdoor only, so bring a layer on cool evenings. EnterpriseAM listed it as accessibility friendly in March 2026.
  • Hours and booking: its own booking page listed 9:30am to 11pm daily when we checked on 11 October 2026 (hours may vary on holidays), and it now takes table bookings online. In Ramadan 2026 the park closed at midnight and reservations were required (EnterpriseAM).

What to order where: Cairo by dish

  • Koshary: Koshary Abou Tarek.
  • Shawarma: Abou Haidar.
  • Liver, molokhia and hawawshi: Kebdet El Prince. Egyptian Streets (2021) also named Hawawshi El Refai, whose original branch is downtown.
  • Stuffed pigeon, moamar rice and offal: Hagogah.
  • Seafood: Bahary.
  • A Citadel view: Al Khan by Granita (we could read only its Ramadan 2026 menu).

Getting there: the six are far apart

Sheikh Zayed (west) and New Cairo (east) are at opposite ends of greater Cairo, so group meals by area:

  • Centre: Abou Tarek and Al Khan both fit a day in Islamic Cairo and Khan el-Khalili.
  • East: Abou Haidar and Hagogah are both in the Heliopolis area. Bahary is in Nasr City and New Cairo.
  • West: Kebdet El Prince, and Abou Tarek's takeaway outlet in Sheikh Zayed.

When to go, and how long you will queue

  • Koshary Abou Tarek: a table or parking can be hard to find on weekdays and weekends alike (Egyptian Streets, 2022).
  • Abou Haidar: expect a queue in front of the shop and cars crowding the street (Food Today, 2023).
  • Bahary: packed most days, with waits of 20 minutes to about an hour in 2024. Scoop Empire advised going before 7pm.
  • Al Khan by Granita: liveliest at dinner, and weeknights are quieter than weekends (EnterpriseAM, 2026).

Cash, tipping and the bill

Tip in cash. Our Egyptian food guide suggests an extra 5 to 10 percent where a 12 percent service charge is already on the bill, and 10 to 15 percent at small eateries without one. We could not confirm card payment at any of the six, so carry small notes. At Al Khan, budget for park entry too.

We checked in October 2026; the Downtown counter can differ.

What is the history of Koshary Abou Tarek?

Founder Hajj Youssef Zaki, known as Abou Tarek after his eldest son, left school at 13 and sold koshary from a cart in Downtown Cairo. Press accounts date the cart's start to the 1950s or to 1963. Is shawarma famous in Egypt?

Is El Brens the same as El Prince?

Yes. El Brens is the Egyptian pronunciation of El Prince. In Cairo it means Kebdet El Prince (كبدة البرنس), the liver and molokhia restaurant that reopened in the First District of Sheikh Zayed in December 2025, three years after its Imbaba shop closed.

Do I need to book these restaurants?

Al Khan by Granita takes table bookings online, and in Ramadan 2026 reservations were required. Bahary has run a waiting list at busy times and now also takes table requests, and going before 7pm helps. Koshary Abou Tarek has no booking system we could find, so treat it as walk-in. We found no booking policy for Abou Haidar, Kebdet El Prince or Hagogah (checked October 2026).

Do you tip waiters in Egypt?

Yes. Tipping is expected because service wages are low. Where a 12 percent service charge is already on the bill, leave an extra 5 to 10 percent in cash for the waiter. At a small local eatery with no service charge, round up 10 to 15 percent. Carry small notes, since we could not confirm card payment at these six.
