Overview
Cairo doesn't slow down after dark — it changes character. This evening walk trades the daytime heat and crowds for floodlit stone and the smell of grilling meat. You start beneath the Citadel of Saladin, where the alabaster domes and slender minarets of the Mosque of Muhammad Ali glow against the night sky and the city spreads out below. From there you head into the lantern-lit lanes of Khan el-Khalili, the medieval bazaar that has traded in gold, copper and spice for six centuries and is still busy well past midnight. The heart of the evening is the food: koshary — Egypt's beloved tangle of rice, lentils, pasta and fried onion in tomato sauce — from a downtown institution, hawawshi (spiced minced meat baked in crisp bread), grilled liver sandwiches, and sweet mint tea at a café where locals play backgammon under old photographs. Your guide navigates the crowds, orders like a regular and explains what you're tasting and why it matters. You finish by the Nile, watching the feluccas and lit bridges reflected in the water.
