Overview

Egyptian food is best learned where it's actually cooked — in a family kitchen, not a demonstration hall. This hands-on class puts you at the counter with a local host to prepare a full home-style spread from scratch. You'll work through four or five classic dishes, which typically include koshary, the beloved street-food tangle of rice, lentils, pasta and crispy onions in spiced tomato sauce; taameya, Egypt's fava-bean take on falafel; and mahshi, vegetables stuffed and rolled with herbed rice. Along the way your host shares the small things recipes leave out — how to layer the spices, get the onions properly caramelised, and balance the cumin and garlic that give Egyptian cooking its character. Fresh produce is sourced locally so you're cooking with the same ingredients a Cairo household would use. When everything is ready you sit down together to eat the meal you've made, over conversation about food, family and daily life in the city. It's a relaxed, sociable few hours and an easy way to meet Cairenes on their own turf. You go home with the recipes and the confidence to cook them again. Hotel pickup and drop-off are included.
